Armando Ventura has a 3.5 acre farm called El Guachipillin in the community of Carrizal. Armando has participated in regular seminars with the Catracha Project for guidance on farm management, harvesting and coffee processing that is focused on quality and sustainability.
Mr Ventura processes coffee at his own micro-mill at El Guachipillin so that he can depulp, ferment and dry his coffee before delivering it to Catracha Coffee for export. After harvesting, ripe cherries are macerated overnight and depulped the next day, then fermented in a cement tank for 24 hours, washed and placed on raised beds to dry over a 15-day period.
